Ingredients:
For the muffins:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 large egg (if the price is right!)
1 cup brewed Buff Boy coffee (cooled)
1/2 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
For the coffee glaze (optional):
1 cup powdered sugar
2-3 tablespoons brewed Buff Boy coffee
Instructions:
Preheat and Prep: Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease it well.
Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, granulated sugar and brown sugar.
Combine Wet Ingredients: In a separate bowl, whisk together the egg, cooled Buff Boy coffee, milk, vegetable oil and vanilla extract.
Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. A few lumps are OK.
Add Chocolate Chips: Gently fold in the chocolate chips.
Fill Muffin Cups: Fill each muffin cup about 2/3 full.
Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Prepare the Glaze (Optional): While the muffins are cooling, whisk together the powdered sugar and brewed Buff Boy coffee until smooth. Add more coffee if needed to reach your desired consistency.
