While ice cream is a classic, sometimes I crave something a little lighter, a little more… invigorating. That's when my mind turns to freezer pops. But not just any freezer pop – a coffee-infused one! And not just any coffee – ours, of course!
As a Buff Boy (and a chef), I’m always looking for creative ways to incorporate our blends and roasts into different treats. This recipe is my latest obsession: a simple, delicious and incredibly refreshing coffee freezer pop that's perfect for those scorching summer days. The rich, bold flavors of Buff Boy Brewing coffee shine through, providing a delightful caffeine kick that's far superior to your average sugary icy treat.
So, grab your favorite Buff Boy blend (I personally recommend a dark roast for this recipe), and let's get started! This recipe is incredibly flexible, so feel free to adjust the sweetness and coffee strength to your liking.
Here's what you'll need:
2 cups of strongly brewed Buff Boy Brewing Co. coffee: Brew it a little stronger than you normally would. Remember, the flavor will mellow slightly when frozen.
1/4 - 1/2 cup of sweetener: I prefer honey or maple syrup (helloooooo, Canadians!) for a more natural flavor, but granulated sugar works just fine, too. Adjust the amount based on your preference.
1/2 cup of milk or cream (optional): This adds a creamy texture and richness. I like using oat milk.
1 teaspoon of vanilla extract (optional): Enhances the coffee flavor and adds a touch of sweetness.
Freezer pop molds: You can find these online or at most kitchen supply stores.
Freezer pop sticks: Wooden or reusable.
Instructions:
Brew Your Coffee: This is the most important step. Use your favorite brewing method to create a strong batch of Buff coffee. I typically use a French press for the best flavor extraction. Let the coffee cool slightly before proceeding.
Combine Ingredients: In a pitcher or large measuring cup, combine the cooled coffee, sweetener, milk or cream (if using) and vanilla extract (if using). Stir well until the sweetener is completely dissolved.
Taste and Adjust: This is where you personalize the recipe. Taste the mixture and adjust the sweetness or coffee strength as needed. Remember that the flavor will be less intense when frozen, so it's better to err on the side of being slightly sweeter or stronger.
Pour into Molds: Carefully pour the coffee mixture into your pop molds, leaving a little space at the top for expansion as they freeze.
Insert Pop Sticks: Insert the freezer pop sticks into the center of each mold. If your molds don't have a designated spot for the sticks, you can wait until the mixture starts to freeze slightly (about an hour) before inserting them. This will help the sticks stay upright.
Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours, or preferably overnight.
Unmold and Enjoy: To easily unmold the pops, run the molds under warm water for a few seconds. Gently tug on the pop sticks to release the frozen treats.
Tips and Variations:
Chocolate Coffee Pops: Add a tablespoon or two of cocoa powder to the mixture for a decadent chocolate coffee treat.
Mocha Pops: Combine the coffee with chocolate syrup and a splash of milk for a mocha-flavored pop.
Spice it Up: Add a pinch of cinnamon or nutmeg to the mixture for a warm, spiced coffee flavor.
Adults Only: Add a shot of coffee liqueur or rum for a boozy twist.
