Buff'ed nan'er bread



There are few things as comforting as a warm slice of banana bread. One, of course is Buff Boy coffee. Come on, that goes without saying! Both are staples in my kitchen, go-to must-haves for breakfast -- and after a great meal for dessert.

Over the years, I've experimented with countless variations, always looking for that extra something to elevate this classic. And recently, I discovered a game-changer that combines two of my absolute favorite things: bananas and coffee.

You might be thinking, "Coffee in banana bread?" And yes, I admit it sounds a bit unconventional. But trust me on this! The rich, robust notes of coffee perfectly complement the sweetness of ripe bananas and the warmth of traditional spices.

And our Buff coffee beans have a deep flavor profile that lend an incredible complexity without overpowering the banana. I found that a strong brew of our O.G. signature roast adds a beautiful depth, creating a truly unique and irresistible loaf.

Here's how I make my favorite coffee-infused banana bread:

Yields: 1 loaf
Prep time: 15 minutes
Bake time: 50-60 minutes

Ingredients:

    2-3 very ripe medium bananas, mashed
    ½ cup granulated sugar
    ¼ cup packed light brown sugar
    ½ cup unsalted butter, melted
    1 large egg
    1 teaspoon vanilla extract
    ½ cup strong Buff Boy Brewing coffee, brewed and cooled
    1 ½ cups all-purpose flour
    1 teaspoon baking soda
    ½ teaspoon salt
    Optional: ½ cup chocolate chips or chopped walnuts/pecans

Instructions:

    Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
    In a large mixing bowl, thoroughly mash the ripe bananas. Stir in the granulated sugar and brown sugar until well combined.
    Add the melted butter, egg, vanilla extract and the cooled Buff coffee to the banana mixture. Mix until all the wet ingredients are well incorporated.
    In a separate medium bowl, whisk together the all-purpose flour, baking soda and salt.
    Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are perfectly fine. If using, fold in the chocolate chips or nuts now.
    Pour the batter evenly into your prepared loaf pan.
    Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center of the bread comes out clean.
    Let the bread cool in the pan for about 10 minutes before carefully transferring it to a wire rack to cool completely.
